Turkish tomato pomegranate walnut salad (Gavurdagi)

Turkish Gavurdagi salad is a vibrant and flavorful dish that features fresh ingredients, a light and
fragrant dressing and heart-healthy walnuts. It’s a great way to add more color to your usual
meals, and it pairs best with your choice of a grilled protein source.

Ingredients

Salad

  • 4 Roma tomatoes, chopped
  • 1 bell pepper, deseeded and chopped
  • 2 cucumbers, diced
  • ¼ cup red onion or shallot, diced
  • 1 cup fresh parsley, chopped
  • 1 tbsp fresh mint, chopped
  • ¼ cup pomegranate arils
  • ¾ cup of walnuts, chopped

Dressing

  • 1 tsp sumac
  • 2 tbsp pomegranate molasses
  • 2 tbsp olive oil
  • 2-3 tbsp of lemon juice
  • 1 tsp garlic, minced
  • (optional) cayenne pepper
  • Salt and pepper, to taste

Instructions

  • Chop up your fruits and vegetables, add them to a shallow serving bowl and mix together.
  • In a separate bowl, prepare salad dressing and drizzle over.
  • Garnish salad with chopped walnuts and pomegranate arils.
  • Serve immediately.
