Many of us don’t want to turn the oven or stove on in the summer, so quick no-cook meals are a must. This salad takes advantage of peak-season watermelon and cucumber, with a delicious hit of protein in the form of feta or goat cheese. Watermelon salad makes a great side dish with barbecue fare, or can stand on its own as a light lunch or snack. Add cayenne pepper for an extra kick.
Ingredients:
- 2 tablespoons honey
- 2 tablespoons fresh lime juice
- 2 tablespoons extra virgin olive oil
- Salt to taste
- 1 medium watermelon, rind removed, cut into cubes
- 1 English cucumber
- Handful fresh mint leaves
- Handful fresh basil leaves
- ½ cup crumbled feta or goat cheese *if vegan you can substitute for tofu or vegan “goat” cheese
- Cayenne pepper (optional)
Method
- Prepare the dressing by whisking together honey, lime juice, olive oil and salt in a small bowl. Set aside.
- Place watermelon, cucumber, mint, and basil in a large bowl.
- Add dressing, feta, and cayenne if desired. Toss to combine. Serve immediately.
