Chia seeds are a great source of fibre, healthy fats, calcium, and plant-based protein. These tiny seeds gel and form a pudding when combined with milk or water. Chia seed pudding serves as a quick and filling breakfast to help you start your day right, and it requires you to be in the kitchen for less than 10 minutes the night before!
Ingredients

½ cup frozen blueberries

1 Tsp. cinnamon

½ Tsp. vanilla extract

¾ cup milk or milk alternative

2.5 Tbsp. chia seeds

1 Tsp. maple syrup (optional, add this for a sweeter treat!)
Method

Place all of your ingredients except for your chia seeds into a blender and blend until you have a smooth consistency, 1-2 minutes.

Pour this liquid into a jar and thoroughly stir in your chia seeds.

Let everything in your jar sit for 5 minutes.

Stir one last time to get rid of any clumps.

Place in the fridge overnight and serve chilled the next day.
