Clean-out the fridge recipe: beef stuffed peppers

Ingredients

  • 4 large red or yellow bell peppers

  • 1 tbsp olive oil

  • 1 chopped onion

  • ¼ lb mushrooms 

  • ½ lb ground beef

  • 1 tbsp dried basil 

  • 3 tbsp parmesan cheese

  • 2 cups tomato sauce

  • Salt and pepper to taste

Directions

  1. Place the rack in the middle of the oven. Preheat the oven to 180°C (350°F). 

  2. Wash the peppers, cut off tops and remove the membranes and seeds.

  3. In a pot of boiling water, blanch peppers for 6 minutes.

  4. In another pot, brown the onion in oil over high heat. Add mushrooms, meat, dried basil, Parmesan cheese and tomato sauce. Cook over low heat for about 20 minutes, stirring frequently. Add salt and pepper to taste.

  5. Place the filling into the peppers.

  6. Bake for 30 minutes.

  7. Serve warm and enjoy your meal!
