Ingredients
- 4 boneless, skinless chicken breasts or thighs (about 2 lbs)
- 2 cups favorite salsa or homemade salsa (see the recipe below)

Instructions
- Place chicken breasts in a slow cooker and cover with salsa.
- Toss until the chicken is covered.
- Cover and cook on high for 4 hours (or low for 6-8 hours), or until the chicken shreds easily with a fork.
- Shred the chicken in the slow cooker and toss with the remaining salsa and juices until well-mixed.

- 3 cloves garlic, peeled
- 1 (4-ounce) can diced green chiles
- 1 bunch (about 2 cups loosely-packed) fresh cilantro leaves
- 1 cup diced white onion
- 1 large jalapeño, stemmed and cored
- 1 teaspoon chipotle chili powder (optional)
- 1 teaspoon fine sea salt
- 1 teaspoon ground cumin
Instructions
- Pulse all ingredients together in a food processor or blender until smooth.
- Taste and season with additional salt, if needed.
- Serve immediately or refrigerate in a sealed container for up to five days.
